What's for dinner..
roasted Talapia, potatoes, and lemons!
1 pound baby potatoes
1 lemon, thinly sliced
8 sprigs fresh thyme
2 tbl olive oil
kosher salt and bk pepper
1/2 cup pitted kalamata olives
4 -6 ounce skinless talapia fillets
1/2 teaspoon paprika
heat oven to 400 degrees F
toss potatoes, lemon, thyme, oil, salt and pepper on baking sheet
roast, tossing once, until the potatoes begin to soften- about 20 min
toss the olives w/ potato mixture; nestle the fish in the potato mixture. drizzle the fish with a bit of olive oil & season with the paprika and salt and pepper to taste/
continue to roast until the potatoes are golden brown and crisp and the fish is opaque throughout- 12-15 minutes more.
serve with half glass of white wine of your choice and ENJOY~~~
